The Cloudburst manual describes how to save presets, as well as how to put the Cloudburst in the proper state to change the default MIDI channel.
You will certainly need a MIDI 5-pin to TRS adapter, Strymon makes one themselves, and I've used the Chase Bliss MIDIbox to connect to a Cloudburst as well. Keep in mind that there are many variations among manufacturers as to where the MIDI data is sent on a 1/4" TRS, so whatever device you get, make sure you read the manual to make sure it's set up properly for the Cloudburst's requirements.
As to how to send PCs on the PBC, there are a huge range of ways to do this. The simplest is to use the PC menu on each preset to send messages, but I also use IA buttons to do the same. So that will depend on how you intend to use the PBC and what workflow works best for you.
