Ventris setup

I just recently removed my Big Sky and replaced it with the Source audio Ventris. I’m very much a newbie at all things midi.
what are the basic settings for the Ventris? Such as the Pc offset, max pc, bank type. And the cc number and on value for turning on or bypassing .

As long as you have a fairly recent version of the PBC firmware, the Ventris settings are in there, you can just select Manufacturer = Source Audio and Model = Ventris in the Devices tab (or Edit Devices screen)

Most MIDI devices are 0 for off and 127 for on. Unfortunately, bypass is a bit problematic. Some manufacturers think that "bypass on" means the pedal is bypassed. Others think that "bypass on" means that the pedal is active. The pedal manual may have this information (although surprisingly, some don't). Otherwise, you can just try it and reverse the values if needed.
